Organic certification explained

I thought I’d follow yesterday’s post about LEED certification with an exploration of another big “green-related” certification:

What has to happen for a producer to put an “organic” label on his or her product?

The USDA actually has a brochure and a chart on its website that outline the requirements for different organic claims on packaging. Take a look at them, then take a look at your pantry; are things as organic in there as you originally thought?
